I had a beautiful run through the trails today. Spring has been long in coming and it was finally sunny and 70, so I thoroughly enjoyed my time outside in the fresh air. Afterward, I was feeling good, and wanted to continue making healthy food choices, so I raided my fridge for every vegetable I could find to make this grilling great. Super easy to do all and delicious every time. Here is my recipe for seasoned grilled vegetables in 4 easy steps!
Step 1: Chop Your Favorite Veggies
Really anything will do, chop up any veggie you have in your fridge... onions, peppers & mushrooms are the staple for this dish.
Step 2: Coat Lightly with Oil & Season
I used extra virgin olive oil to lightly coat and seasoned with a fiesta blend.
Step 3: Add to grill basket and cook on the grill on medium heat
Step 4: Savor & Enjoy!
